The young commis chef Laurent takes Chef Kelly to meet with Mathieu to discover the traditional recipe of the "civet zourites au sel" ("zourite" stew with salt). For her revisit, Chef Kelly meets with Gabriel and Camille, two "zourites" producers in Saint Gilles, as well as a salt producer in Saint Leu, Eric.
