Ciao Italia - Spaetzle

Mary Ann heads to Alto Adige, the northernmost region of Italy to recreate some unique spaetzle (dumpling) recipes unique to this area, including a bright, spring-green, nutmeg-sprinkled Spinach Spaetzle tossed in a sauteed onion and speck sauce. Then she finishes off with Spaetzle dressed with a rich butter, cream, and speck sauce.
